Last week I bought some more groceries to make some more freezer meals. We hadn't quite finished our first batch but I wanted to get some more into the freezer before we completely ran out. This time around it definitely took me a lot longer and a lot more money! Mainly because chicken was so expensive and not on sale this time around, I definitely need to plan that better next time.
Overview of this round:
Total Cost $121.29 (Some of these items were staple replacements that we'll continue to use)
Total Time 6.5 hours
Total Meals 11 meals + 3 snacks
Meals:
Baked Ziti x 2 (2 full meat meals & 2 half veg meals for the live in man friend)
Chicken Spaghetti x 2 (with shredded chicken on the side to add when cooked)
Teriyaki Chicken x 4 (2 for me and 2 for my sister in law who just had a baby)
Chicken Strips x 2 meals worth
Cooked ground beef
Bag of frozen veggies
Blueberry & Strawberry Muffins x 16

I think the reason this round took so long was because of the pasta and making separate meat meals and vegetarian meals. The chopping of veggies always takes a long time as well. The quickest to make is the Teriyaki chicken because you just toss everything into a bag once you have all the veggies chopped.
Meal Reviews:
The chicken strips are great, the kids and I both love them.
The Teriyaki Chicken is a hit as well.
We had the Chicken Spaghetti tonight and after having it fresh and after frozen, I must say the fresh was better and the frozen was just okay. I found it kind of dry after freezing, maybe I'll add more of the liquid ingredient before freezing again if I make it.
The Baked Ziti was really yummy and a favourite for everyone, I'll definitely make this one again.
I had actually planned to make a couple of other things, pancakes, muffins, and Lasagna Roll Ups. Needless to say time got away from me and I only just made the muffins today, they were super yummy! The kids and I loved them. Instead of using just white flour, I added 2 cups of whole wheat flour in place of all white. I'll definitely make them again, they weren't too difficult and the kids ate them up.
I should be good for a while again, I still had some things left in the freezer from last round. I do want to make pancakes again for the freezer though and I need to do up a lasagna since I bought the cheeses. I have a crockpot lasagna I could do as well.
